
TOFU? Mmmmm. I was afraid of Tofu for a long, long time. And then I ate it finally at this Vegetarian Restaurant about two years ago... where they flipped it, dipped it, fried it, and had it tasting fine! But when I brought some tofu home and tried to recreate that perfection myself...it tasted like seasoned water! So I stayed away from cooking it for about a year. But I'm sick of my packaged protein patties... so I decided to get some Tofu from Trader Joes...and it was only $1.29! To make it delicious and keep it nutritious, I added lots and lots of Pepper, Balsamic Vinegar, and just a bit of Teriyaki Sauce (just a tbsp because of the sodium) and it was delicious....Tofu is back in my life. Yes!
3oz of Trader Joe's Medium Firm Tofu, only 60 calories and 8g of Protein! Whoa!
1 handful of Cherry Tomatoes
1 c of Spinach (Not cooked. I try to have some raw veggies everyday. It's so good for me!)
1 tbsp of Island Teriyaki Sauce
1 tbsp of Balsamic Vinegar (My friend Dominique added this to pasta sauce once and I was shocked and appalled. Now I put in in everything. It' so good. It adds an interesting flavor to the unexpected.)
1 tsp of raisins
1 tsp of almonds
1 dollop of Hummus.
From this meal, I got 8g of Protien, and 2 servings of Vegetables. Yummy!
