Stacy's Bangin Big Bowl Salad



I love salads! Since this is the week of Valentine's Day, I am focusing on all the things I just LOVE to eat!! I went out for a run along the Hudson River because it was only 58 degrees this afternoon! I had a great 45 minute workout. Everyone kept pointing and staring at me and I figured I just looked great in the sleek running outfit (Gray leggings, a black spandex turtle neck, and a black vest. Yes Ms. Sexy!) But to my surprise, when I got back home I realized a Pigeon had excused itself all down my back. Oh well. The breakfast as well as the compliments I THOUGHT they were giving, kept me going fast.

I was a hungry hippo when I got back and was bare of necessities, so I made a veggie stir-fry on top of a large salad. I used some sausage-less soy hot-dogs. I did not even know these were good and could exist well in Stir-Fry but my friend Lisa introduced me to this when we were in London when she put some in our stir-fry one night. I love it. The ones I used are from trader joes and I like them a lot. They have 13 g of Protein and are only 140 calories. The other ones that are Tomato and Basil have as much Protein but are 230 calories, so I opted for these more nutritional ones instead....though I miss my other ones...

1 Italian Sausage-Less Hot-Dog, cut up
1/2 c of Broccoli
1 c of Spinach
1 tbsp of Tomato Chutney
1 tbsp of Raw Almonds
1 tbsp of Raisins
This was cooked on the stove, mixed, and added to:
1 large bowl of Romaine Lettuce.
and a dollop of Hummus.
Yummy!

From this meal, I got 3 servings of Veggies. And 13 g of Protein. I also had an Oreo for dessert. It was delicious and I had to turn off the lights in my kitchen to ensure I would sneak 5 more...I didn't. But I dreamed about it.
