Stacy's Mix and Match Plate


MIX AND MATCH YOUR PLATE!
I worked out twice this day and was as hungry as a linebacker. Luckily...I had a dinner date!
My friend Dominique and I had a dinner to date because she wanted to recreate the egg and spinach meal I made a couple of weeks ago. But it turned into how many healthy dishes we could fit on one plate. YUM. We even had a couple of pieces of pizza to go with this. It was a non-stop eating session. And we enjoyed every minute of it. However, my stomach was feeling the blues because of the cheese on my veggie pizza slices. I think I'm done with real cheese. I'm going to stick to soy. It's healthier anyway.

1 small serving of egg, spinach, and grape tomatoes
1 small serving of cranberry and apricot cous cous
(Dominique's creation that was de-licious!)
5 falafels

1/4 c of hummus
2 slices of veggie pizza (not shown)

From this meal, I had a little too many carbs. But lots of veggies! And I worked out twice. So I quickly brushed it off and was full and happy. Yum.
