Stacy's Bold Lunch


POW! IN YOUR MOUTH. I am trying to pair a salad with lunch and dinner, and a fruit with breakfast and snacks...For lunch today I decided to have lots of flavor. I made a delicious small salad and baked three Black Bean and Cheese Taquitos from Trader Joe's. YUM. (They are packed with Protein and lots of Fiber! And only 310 calories for four!)

Salad w/ 1tsp of Parmesan cheese, trail mix, balsamic vinegar, and olive oil

1 dollop of HOT salsa with a pinch of sour cream

3 Trader Joe's Bean and Cheese Taquitos (Baked in the oven on 425 for 15min!)

Stacy's Honey Happy Breakfast


BREAKFAST FOR CHAMPIONS! I woke up this morning with only one thing in mind, and of course, it was my cereal. I decided to have a fun combination with a variety of different things.

1 c and 1/3 c of Trader Joe's High Fiber O's
1/2 of a Banana
Vanilla Soy Milk
1 tbsp of Trail Mix: Raw Almonds, Raisins, and Sunflower Seeds
1 tsp of Honey
Strawberries

So I realized last night that I'm addicted to fiber. I just love it, it's so good for me, why not? I read an article last night that a woman is supposed to get at least 25 g of Fiber in a day, which most of us to do not get. It's difficult, but so many things have lots of fiber. There are two things that I am going to try for next week, one: no refined flours and two: no dairy or eggs....That's right, I'm thinking of going Vegan. I realized that I already do it because I eat alot of beans and veggies and fruit, but the eggs are going to be pretty tough. Right now I'm going to take it a little at a time, if I don't like it, I'll stop it.

Sophia's Vegan Taco Lunch

VEGAN TACOS!!!!!








I've been getting bored with my meals, so today I wanted something new that I hadn't had before. I went to Heritage Health Foods and instead of getting my usual Raw Trio I purchased Soul Gourmet Vegan Cuisine VEGAN TACO SALAD. It was delicious!!
ingredients- bulgar wheat, soy milk, salsa, green bell pepper, onion, lettuce, tomato, cumin, chili powder, taco seasoning, seasoned salt, mustard, lemon juice.
nutritional info- 2 servings, pers serving 160 cals, carbs 23g, fiber 6g, protein 5g.

Sophia's Sun Sun Sun and Breakfast

HAPPY BIRTHDAY STACY
Today is Stacy's Birthday!! YAY!! She's turning 22. LOVE U LADY!! Have a GREAT DAY!! :)


It is absolutely BEAUTIFUL today. I cant wait to go out for a jog. It was super sunny when I up, and the weather is mid 60's-70's.

For Breakfast I had...
Kashi Go Lean
(High Protein & High Fiber Cereal) with some Banana (instead of milk I used: "Rice Dream" unsweetened Vanilla)
1 cup -140 Calories, 13g Protein, 10g Fiber (I had about a cup and a half)

1 Boca Original Vegan Burger
70 Calories, 13g Protein, 4g Fiber

It's really good to have protein in the morning (eggs are a great source) because Protein keeps you full longer and it gives you that morning boost for a long day.

Sophia's Protein Dinner Overdose.

Today I had a massive craving for protein. This happens sporadically, it's good and bad. #1, it shows I'm in tune with my body and I know what I need, #2 it's bad because it shows that I am lacking in nutrients that are crucial for good health.

Tonight for Dinner I had Scrambled Tofu with Avocado, Tomatoes, Mushrooms and Onions!!!

Stacy's Salads

I THINK SALAD IS THE CAT'S MEOW.

I decided to make a delicious salad. I cooked tofu on the stove and mixed it in the bowl with my own special dressing and raw almonds. I had a dried pineapple on the side. Yum. This meal is over 3 servings of vegetables that I need for the day. Ain't life grand...?

Stacy's Positive Instead

Hello All. I have been away for a little bit to think my food life over. And as I was thinking about the new thing I should give up, or the new way to lose weight, or the new workout I should try. I realized, nothing of those things really matter. They have nothing to do with me. They are what I think I should be thinking about or what I think I should want to think about. I'm turning 22 on Saturday and I am extremely excited. But I felt myself becoming scared because I still have some of the same eating issues and weight problems that I had when I was 12. But I realized in many ways I have changed and grown, and in the other ways I have not because I have not overcome my life problems yet. Whatever is going on with me, I know what it takes to eat healthy and to be healthy and for right now, that's going to have to be good enough. Perhaps if I think positive thoughts instead of negative, my actions will be positive instead of negative. And I can enjoy chocolate because I want it, not because turning 22 is a big step.

Sophia's Fresh and Warm Breakfast

Good Morning!!!

Well this past weekend in the Chicago Suburbs it was absolutely beautiful, but this morning it's dark and looks like it might rain. Uggh. I just want it to be summer!

For Breakfast I had strawberries and oatmeal.

I added a little organic brown sugar to dip my strawberries in.
For my oatmeal I added mixed nuts and brown sugar.

Sophia's Dinner and a Book (Friday Night)

A Day of SPEND, SPEND and MORE SPEND-
I splurged today because I'd been reading about this excellent Vegan book online and I really wanted to get it. Becoming Vegan by Brenda Davis and Vesanto Melina, discusses the history of veganism, health benefits, how to be a healthy vegan, vitamins and minerals you'll need, a food guide, raising vegan kids, the pregnant vegan, how to deal with a non-vegan world, getting calcium without using dairy etc...

So far I really enjoy it, so I'll be sure to post about my reading as I get more into the book!

Then I went to Heritage Health Foods and got some old and some new for dinner. I purchased the Raw Trio I had before (its in an earlier post) and I also got Sweet and Sour Tofu to go with it.

Kale Salad, Carrot Salad, Spicy Sunflower Seed Pate, Sweet and Sour Tofu



SWEET AND SOUR TOFU- (Vegan) - ingredients: organic tofu, celery, carrot, onions, garlic, toasted sesame seed oil, apple cider vinegar, water, organic cane sugar, organic corn starch.

Sophia Goes to Trader Joe's

VEGAN GROCERIES
As stated in a previous post I was completely out of groceries, so fortunately I had time to make a TRADER JOE'S run today!!!

I wanted to try some new cereal, and all my old favorites have some sort of milk product in them.
  • Organic Heritage Heirloom Whole Grain (a multi grain cereal) 3/4 serving is 110 calories, 6g dietary fiber and 4g protein. (this cereal does use organic honey)
  • Vanilla Soy Milk
  • Indian Fare Punjab Eggplant

  • Roasted Vegetable Pizza- this pizza is delicious. Its covered in sweet onions which gives it such a wonderful taste and its dairy free, no cheese at all!!
  • Veggie Smart Dogs- 1 link is 45 calories, 8g protein
  • Vegan Morning Star- 1 burger is 100calories, 12g protein, 4g fiber.
