Stacy's Sundried Tomato Pita Pizza



MINI PIZZA WITH A BIG TASTE. My sister is the Queen of these. She seasons them and makes them just right. She calls them, Weight Watcher Pizzas because that's where she learned to do it originally. It is a quick and low fat way to satisfy that craving of pizza but with less bread and less cheese. I went to the store and got some necessities for my Weight Watcher Pizza. To get some more protein besides the cheese, I added half a cube of tofu and mixed it in the sauce so it would have lots of flavor.

1 whole wheat pita
1/3 c of fat-free Trader Joe's Pizza Sauce
2 tbsp of Sundried Tomato Feta Cheese
1 tbsp of Sundried Tomato Hummus
1 1/2 c of Spinach
2 tsp of Italian Seasoning
1 tsp of Oregano
1 tsp of Onion Powder
1 tbsp of Balsamic Vinegar

I put down the hummus first, then the sauce with the tofu that I cooked on the stove for 2 minutes, then I added the spinach, and then the cheese! I put in in the oven on 350 degrees for 8 minutes and it was done and ready to be eaten! I LOVE that my sister introduced me to these. I was nice and full and not stuffed when I finished. YUM.
