Stacy and Lisa's Cinna-love Granola Bars

LOVE BARS. I have been dying to make these granola bars ever since I stumbled onto the recipe on JOYFUL ABODE which is a wonderful food blog. I finally made it tonight with my lovely friend Lisa and we had a wonderful time. We sang, we danced, we ATE. Lisa and I decided to make a couple of changes to the original recipe. Since she's allergic to dairy we omitted the butter and used canola oil instead. The original recipe calls for no cinnamon...but Lisa decided we needed as much as possible. Ahhh...it was wonderful.

First we roasted the oats and nuts together in the oven on 400 degrees for 10 minutes
Then (while that combination roasted) we cooked the honey, sugars, and salt on the stove until it made a nice glue.
After the oat combo was done, we put it in a bowl and added the 'glue' and put it in a pan.
Then we put the pan in the freezer because we wanted them right away. But the original recipe called for 3 hours in the fridge! Ah! We could not wait. This was wonderful and delicious. After we tried these they seemed a little sweet so we added a little salt.

2 1/2 c of old fashioned oats

4 tbsp of canola oil

1/4 c of honey

1 tbsp brown sugar

1/4 c white sugar (we ran out of brown...)

1 c of dried nuts and fruits, crushed

3 dashes of salt

2 tbsp of cinnamon

The original recipe can be found at www.joyfulabode.com/blog under Homemade Granola Bar Recipe.
