

SWEET & CRUNCHY. After the delicious Granola Bars Lisa and I made I tried to make them again and ended up making weird granola. But it turned out to be delicious and it's lasted a lot longer than the bars. My roommate said she even topped some on her yogurt. I decided to have this with some Vanilla Soy Milk for dessert. I realized this was in a shape of a beautiful granola heart. Awww how cute.
3 1/2 c of old-fashioned oats
2 dried pineapple rings
1/4 c of salted and roasted peanuts
1 c of cinnamon and sugar almonds
4 tbsp of canola oil
1/2 of sugar
a drizzle of honey
1 tbsp of vanilla extract
1 tsp of salt
1/4 c of cinnamon puffins cereal
3 tbsp of Vanilla Soy Milk
I first roasted the oats, nuts, dried fruit, and cereal in the oven for 10 minutes, and sprinkled it with some Soy Milk first. I added puffins cereal to the mix because I thought it would add a nice cinnamon crunchiness. (And because I have yet to buy my own cinnamon)
While that was roasting, I heated all the other ingredients on the stove for 5 minutes. I think why this turned into granola and not granola bars is because I didn't have enough honey to grip it all together and perhaps I used too much oil. I'm not sure why actually. But I think honey is the key. Honey is the glue that holds it all together. Anyway, it turned out to be great. YUM.
