


BLACK BEANS AND RICE IN...NEW ORLEANS? Well, I will be there on Friday. And I plan to take lots of pictures of the delicious and probably not so nutritious foods. But I will try to find as many light and soulful foods as I can. I was going to have a sweet potato but I wanted rice and beans and....so I dropped the potato. After meeting a nutritionist, I realized I wasn't eating enough protein. And then I had the strongest craving for chicken today. So I just might be hanging in the towel on my vegetarian diet. Luckily for lunch I had two boiled eggs with a nice spinach salad. But it still wasn't enough protein for me. I was still a little hungry. I'm bumping up the protein at every meal!
1/2 c of Black Beans
1/4 c of Brown Rice
2 c of Raw Spinach
1 dollop of hummus
1/2 tsp of Olive Oil
1 tbsp of Cranberry Balsamic Vinaigrette
