Stacy's Brunch Burrito




PROTEIN. PROTEIN. With my breakfasts so high in protein I'm not running my way to lunch, but now I have to make sure I get fiber in other ways throughout my day. I had a delicious breakfast/lunch burrito this afternoon. Woke around 11am and was in the mood. I just used a couple of eggs, spinach, and some of my left over veggie soup...and some sundried tomato hummus. I know...it sounds strange. But it was FLAVORFUL AND DELICIOUS.

2 eggs, scrambled
1 c of fresh spinach
1/2 of veggie soup
1 tbsp of sundried tomato hummus
1 whole wheat wrap
